If you are anything like me, smoothies aren’t your go-to breakfast. I much prefer a slow, quiet breakfast and actually chew my food. Breakfast probably is my favorite meal of the day and I don’t mind getting up earlier for that, just so I can enjoy that time and start my day from there.
But sometimes it just doesn’t work like that. At the moment my schedule is jam-packed: early mornings and late nights, which I don’t mind. Yet it means that a smoothie can be a great alternative when there really is little time in the morning.
So after playing around with different ingredients and working out what I need to fuel me for the day, this recipe is one of my favorites – a green, yet sweetish and protein-rich smoothie.
- 2-3 cups spinach (or 1-2 cups plus 1 zucchini)
- 1/2 banana
- 1 cup blueberries
- 1 Tbsp chia seeds
- 2 Tbsp protein powder (or whatever else you’d like to add for protein)
- 1 cup coconut water/milk
And I like to sprinkle some homemade granola on top (there needs to be something to chew hey…). Quite yummy and a good boost of energy 😉
You can add/change whatever you like e.g flaxseeds are a great extra, oats make it more filling or add more zucchini for more greens.
I usually whip it up the night before, so in the morning it has it’s creamy texture and is ready to go. It literally takes less than five minutes and is a good compromise for when there is little time in the morning.
The cool thing about blending up something like a smoothie is that you can easily swap ingredients out, add on, or sneak in an extra load of veggies that you otherwise wouldn’t have.
So if your mornings are busy and you tend to skip breakfast because of that or end up buying something on the way, try a smoothie. It probably is a lot cheaper than the breakfast on the go, plus a lot healthier, too. And nothing can beat something homemade, hey? 🙂
