Got some fruits to chuck out? Wait a second…

Wasting food. Oh that’s one of those things that make my heart crunch. I absolutely do not like it at all. So so many of us have the privilege of having food available any time. Too much even. We can choose whatever we like, all prepared into a divine meal if we wanted to. At the same time, there are millions of people that do not have this privilege, where every day is a struggle to sustain themselves and their families. And it drives me nuts seeing food being thrown away when it’s still perfectly fine.

By any means, please please give it a go to not waste any food. If it helps, plan ahead of what you’ll need throughout the week and buy groceries accordingly. If you end up with too much and absolutely don’t know what to do with it you can always give it away or share with friends, families, colleagues, or strangers. Nothing wrong with that. And if something is about to go off, see if you can cook or bake it up before it is not enjoyable anymore.

As an example, we had a few apples that started to lose their crunchiness and turned quite soft. While they might not have been super yummy to eat just like that, they were perfectly fine for baking. And it doesn’t have to take long to bake something delicious. Sometimes keeping it simple is just as great. Whether in an apple crumble, apple cake, muffins, scrolls, fruit mousse, they go well in so many things. I made sort of a pinwheel-cake and it not only smells absolutely amazing, but it also tastes nice and makes a great treat for breakfast or afternoon tea.

  • 3-4 apples
  • 30ml water
  • 1 cup wholemeal flour
  • 1 cup all purpose flour
  • 3 tsp baking powder
  • 100g butter
  • 1 egg
  • 120ml (about 1/2 cup) milk
  • 1-2 tbsp brown sugar
  • 1/2 – 1 tsp cinnamon

Off you go:

  1. Cut up the apples and place into a pot. Add the water and bring to boil, then let simmer for about 15 minutes or until apples are soft. Let cool and preheat oven to 180°C. Prepare a round baking form with baking paper.
  2. In a bowl mix together the flours and baking powder. Add the butter in little chunks and knead everything until combined to crumble like mixture. Mix together milk and egg and pour into flour mixture. Knead everything together into a solid dough.
  3. Roll out the dough into a square shape (approx. 30cm x 20cm).
  4. Blend the cooked apples into a smooth mousse/purée and spread over the dough. Sprinkle with brown sugar and cinnamon.
  5. Roll the dough up from the long side and cut into individual pinwheels (8-10 in total). Place them into the baking form so that they fill up the entire shape. If any of the mousse comes out while cutting up the pinwheels, just use a spoon and add it on top of the pinwheels.
  6. Bake for 30-40 minutes or until golden on top. Let cool for a bit and then enjoy like that or with some ice cream, yogurt, or whatever you fancy 🙂

Now with fruits you can do many things before they go really really bad and can’t be eaten anymore. A few ideas include:

  • Berries: freeze them up and use later in baking, smoothies, muesli, salads, or make a jam.
  • Peaches, apricots, nectarines, plums: these go so well in cakes, muffins, pastries, or cook into a jam.
  • Bananas: banana bread; freeze and use later in smoothie; make a milkshake or pancakes; or use as topping for your toast (sprinkle with cinnamon and maple syrup – divine).
  • Coconut: use the water for smoothies, make your own milk, grate the flesh and roast up to use for granola, cakes or toppings; or make cookies.
  • Oranges, mandarines, pineapple: make your own juice, use in salads, add to smoothies and milkshakes; oranges and mandarines also go well as a topping for an easy sponge summer cake or add to a crunchy granola.
  • Mangoes: freeze and use later in smoothies; add to salads (also goes well with chicken dishes); add to your granola or combine with some yoghurt and cinnamon for an easy breakfast.

More recipes for the above ideas to follow soon. Feel free to experiment around, just try something new and if you have way too much food, share it. It will make you feel so much better than throwing it away. Plus you might even make someone’s day simply by giving something away that otherwise would end up in the bin. Win-win yea 🙂
